Cook a Delicious Sacher (Sachertorte)

The Sachertorte (Austria) is sweet very greedy! Dense chocolate cake with a thin layer of apricot jam on top, coated in dark chocolate icing on the top and sides. It is one of the most famous Viennese and Austrian culinary specialties. This video explains how to cook the Sacher in the original way.

The Original SacherTorte is a combination of two layers of chocolate cake separated by apricot jam and coated with a chocolate icing, sometimes you can find in the side of the dish of the Sacher a little bit of whipped cream. The cake was designed for the Emperor Francis Joseph I and he's been really impressed from it... and now it became an important part of the Viennese culture. More than 360,000 cakes a year are made in Vienna and most of them are shipped all over the world.


  • 200 g of chocolate 60% 
  • 125 g butter
  • 8 egg yolks
  • 10 egg whites
  • 1 pinch of salt
  • 140g caster sugar
  • 1/2 vanilla bean
  • 125 g of flour sifted 00
  • 8 tablespoons of apricot jam

For the frosting:

  • 250 ml fresh cream
  • 375 g dark chocolate (55%)

The doses indicated in the recipe for a cake of 26 cm, by halving the amounts of individual ingredients can make a Sacher 18/20 cm.
